In lieu of wine, some people like beer (a good, rich beer not, you know, that watery, pale stuff) augmented with a few shots of bourbon. Also, more onions. And, if you have time, you can cook your beans in the broth, instead of making gravy. Chuck in some bacon and you're good with all four.
We use homebrew in my house. We keep a container in the fridge for the yeasty dregs left in the bottom of the bottle. These get tipped into a pot of something or other at some point.
